I am having so much fun creating a new page on my website to help all who have been diagnosed with cancer (or any life-threatening illness) and could use some free and uplifting help. Here you’ll find suggestions that have personally helped me when I was struggling with my health. Once the page is up and published (hopefully no later than Wednesday), when any of you ever have a loved one who could use this kind of help, no longer do you have to feel that helpless feeling again for soon you can just send them here. Not only will they get much of the information that helped save my life (obviously there is far more in my forthcoming book scheduled scheduled to published in 2021) but I’ve asked my own support team to be guests (along with their photos and contact information) on this page too. They’ve generously shared their own information that I’ve personally found invaluable! As I’ve been working on this page and seeing these smiling faces, I can feel my body strengthen. I’ve been smiling for two days now in gratitude – not just for these four delightful women who have helped me so very much – but for all the help I’ve received from so many wonderful, loving, and kind people over many years so that I am alive and so happy today.
After reading about all those poor people who either fell or got into car accidents due to the black ice yesterday, I immediately hoped that they all had someone to comfort them at home. The videos I saw looked very scary. Here is a simple recipe for a delicious soup that never fails to comfort me on a cold winter night. .
Broccoli, Pea and Zucchini — or Summer Squash — Soup (It serves six.)
2 tablespoons coconut (or olive) oil
1 white onion, finely diced
3 cloves garlic, minced
3 zucchinis or yellow squash, sliced
2 cups green beans, chopped into ½ – ¾” pieces after the ends have been sliced off and discarded
1 ½ cups frozen peas
1 ½ cups broccoli florets
5 cups vegetable stock
3 tablespoons fresh mint, chopped
2 sprigs fresh thyme, removed from stem
salt + pepper, to taste
- Add the onion and garlic to a large pot with the oil and sauté for until onions are transparent.
- Add squash, green beans, broccoli and peas and cook for several minutes.
- Add the vegetable stock, mint and thyme. Bring to the boil and then simmer on low for about 30 minutes.
- Here you have three choices: Eat as is or add either the whole or just ½ of the soup to a blender or use immersion blender to puree soup. (I blended just ½ and loved it!) Season with salt and pepper and serve while hot.

My goal is to help as many people as I can, knowing what it’s like to be told you’re going to die — by five neurosurgeons- – or that you have cancer and have to get a mastectomy — though I knew I didn’t — and to have loved ones walk away, which is not an usual thing for someone with cancer to experience. I belong to an online support group and have learned that people leaving friends diagnosed with cancer is unfortunately pretty common. We even have a nickname for people who suddenly leave — “Road Runners” — because they take off pretty quickly, just like the cartoon character.
I know how important having support is and to know that people care. Sometimes it’s easier to talk to a stranger, since they don’t know us and aren’t in our lives. The perfect dinner guest is one who responds upon taking their first taste of the soup that you’ve placed before them by saying “This is the best thing that I’ve ever tasted!” I was quite delighted when this recently happened to me and I instantly knew I had to share this recipe with all my blog readers.
The following recipe was given to me by my college roommate Robin. Thank you very much! It truly has become a favorite of mine as well as my dinner guests.
Robin’s Pink Lentil and Coconut Fantastic Soup
1 ½ tablespoons cumin seeds
1 tablespoon coriander seeds
2 tablespoons extra virgin organic olive oil
¼ cayenne or serrano pepper (more or less to taste)
1 small white onion, finely diced
1 cup pink organic lentils
4 – 5 cups organic vegetable stock or you can use water
1 13.5 oz. can of organic coconut milk
2 tablespoons grated fresh peeled ginger
½ tablespoon black pepper
½ teaspoon pink Himalayan salt
2 tablespoons lemon zest from an organic lemon only
2 lemons, juiced or 5 tablespoons of bottled lemon juice
½ bunch of fresh chopped cilantro, or more for garnish
Avocado, diced for garnish
- Toast cumin and coriander seeds in a dry pot over medium heat for 2 minutes. You will smell their aromas when they’ve cooked enough.
- Add the olive oil, pepper and onion. Cook and stir until onion is translucent.
- Add the next six ingredients.
- Turn heat down to low and stir well. Cover, stirring occasionally for the next 30 – 35 minutes, until the lentils have softened and lost their shape. Taste and feel free to add more water, if you prefer this soup thinner.
- When soup is done, remove from burner and add lemon zest and juice.
- Garnish with diced avocado and fresh cilantro on top.

You are a true inspiration, Sandi! Thank you for doing all of this! I have a question about a cancer- free diet. It appears it varies depending on who you speak to. Most people agree that sugar is a big no-no. Still, in Bill Henderson’s wonderful book “Cancer Free,” he mentions eating berries or pineapple every day for breakfast with the cottage cheese/flax seed mix, and that it is OK to have one piece of fruit per day, like an apple or a banana. So I am a little confused.
In it he suggests to eat 80% raw food like smoothies and salads. That sounds kind of tough with winter approaching. An acupuncturist I know also insists that one should eat more cooked and warm food and totally stay off fruit and berries of any kind if dealing with cancer.
I was also wondering if ghee would be OK as a substitute for olive oil when it comes to gently cooking vegetables. It is supposed to be very healthy in many ways, most of the milk solids cooked away, but is it bad to use for people aiming to beat cancer? And what about coconut milk? Is that OK to use? Oh, boy, so many questions. Just one more. Do you have any suggestions for festive drinks with the holidays approaching and alcohol and hot apple cider, eggnog, etc. being off the list for people dealing with cancer? Anything other than tea? Is Kombucha OK to drink? Inquiring minds want to know.

Refined sugar is indeed a no-no and yet how often are people, who have had cancer, ever told this by their oncologists? I certainly wasn’t. Thankfully, more and more doctors are learning about how our diets do affect cancer. I was happy to see this, written by Kathy Ludington, on the Dana-Farber Cancer Institute website. “Becoming more physically active, striving to maintain a healthy weight and eating a plant-based diet including substituting refined sugars and white flour with whole grains and other unprocessed carbohydrates can all help to keep insulin levels in check and promote cancer survivorship.”
Regarding your confusion, I do understand but this is because there isn’t just one way to overcome cancer. The documentary “Cancer is Curable Now” by Marcus and Sabrina Freudenmann, who run the Truly Heal website, shows there are many natural ways to cure cancer. In this movie there is about 30 natural cures that are shown after filming approximately 50. And this movie came out in 2011. (You can now watch it online for free at http://www.youtube.com/watch?v=3telTLkmYSk and I recommend that you do.) Today there are even more natural ways of overcoming cancer. Why we don’t hear about most of them is a topic for another blog however I think the more choices we have the better, so people can choose the best treatment for themselves.
As strange as this sounds, I had the advantage of having had a life-threatening inoperable (though non-cancerous) brain tumor years before I was diagnosed with breast cancer and having five neurologists tell me that I was going to die. Because of this I knew not to just go along with what a doctor thinks since five out of five doctors had, thankfully, been wrong in my past. By the time I got breast cancer I had been practicing listening to my body and developing my intuition for many years. (I strongly suggest that everyone start now.) Because I had been developing this, when a friend handed me Bill Henderson’s protocol and suggested that I might consider it, I immediately knew that this was what I’d been looking for because every cell in my body immediately said “Yes!”
My suggestion is to use your intuition as best you possibly can, while doing research and while hearing what other people think and suggest, to decide what is best for you because, only you can decide. And remember that you always have options, even when you think you don’t. You and only you are in the driver’s seat. I still practice listening to my intuition every day, knowing that it is my responsibility to make the best choices for myself. I find this to be very empowering and it has changed me forever. Remember the song, “I am Woman. Hear me Roar”? Or “Don’t Rain On My Parade?” I still sing this often to bring me strength and comfort.
What I particularly loved about Bill Henderson’s protocol is that he explains in his book how to test our level of cancer every 8 weeks without having the need (or expense) of a doctor. Consequently, when I got my second test results back (The 1st was just a baseline.), I knew that overcoming cancer using natural means was not only possible but that I truly doing it! After this, every time each test came back and the number had decreased — meaning the cancer was not spreading and was going away — I was elated.
What I found particularly interesting is that my MRI and mammogram came back cancer-free in just five months. However this test that Bill Henderson suggests we use was far more conservative. It took me almost three years to finally get below the designated number and reach my goal and celebrate being cancer-free.
I cannot help but wonder if this is one of the reasons why people who use conventional treatments so often get reoccurring cancer. This and they don’t change their diet or their lifestyle that created the environment in which their cancer grew in the first place, I think contributes.
Regarding the fruit that I ate every day, people have said the same thing to me — that I should not to be eating so much fruit. My response to this is that I ate this amount of fruit and got rid of my cancer, so what does this say? I did only eat the amount of fruit I ate to what Bill Henderson suggested and if I ate a date, for example, I always ate it with a protein, such as a walnut, to slow down my body’s glycemic response.
I did have some problems when I tried to eat more than 80% raw foods which I did for a time because I was actually considering going on an all raw diet, but my stomach rebelled. Knowing how important having a happy gut is — I recently read that our gut is responsible for 60%-70% of our immune system — I’d suggest having a thermography test to see how healthy yours is.
Naturopathic physician Dr. Jaime Lee said “Some raw is good for the enzymes, but if we do too much raw it can become an issue for our body to absorb the nutrients. When we slightly steam cook our food, our body absorbs more nutrients because it’s not working so hard to break down the raw food.”
I did not meet Dr. Lee until after I had tested cancer-free so I did eat a diet that was 80% raw, as Bill Henderson suggested to overcome cancer – and it did work for me — however when I later had a thermogram, there were problems in my gut but it was easily corrected using probiotics. This is why I suggest having this test now, to make sure your gut and immune system are working at their best. By the way, if I had young children, I’d have them all tested every year so I knew how best to keep them healthy.
Not everyone is familiar with a thermogram so you can read more about this test and reach Dr. Lee, who I think is great, at http://www.nlhealingartscenter.org/europeanthermography.htm. She’s really a wonderful person with a huge and loving heart.
I also suggest that you do not get the digital version of this test because it doesn’t test the physiology of the whole body, as does the test that Dr. Lee offers.
A thermogram can even detect issues years before symptoms arise, giving us the opportunity to prevent illnesses in our future! If you believe in preventive medicine like I do, then this is the perfect test for you. Additionally, never again am I getting a mammogram. I’m having a thermography test instead. Bill Henderson suggests no dairy so I respect this and eat no dairy, except for the flax seed and cottage cheese mixture that he requires we eat every day. (Once mixed together, even lactose intolerant people can eat this.) I do love and use coconut milk a lot. And I’ve never been much of a drinker myself but now that I am cancer-free, I do enjoy drinking a glass of red wine, maybe once a week while socializing with a friend. I even treated myself to a glass of red wine, once in a while, before I was cancer-free, at a cancer coach’s suggestion.
Knowing our bodies seldom get the amount of water that they need, I mostly drink water now. Festive drinks? I certainly do understand this feeling of wanting to be celebratory. Socially, I will admit this diet can be tough. I still have to avoid social events so I will not be tempted to eat something I shouldn’t or feel sorry for myself because of things I can not have. Avoiding feeling like a victim is very important so I would avoid socializing under situations that felt “unsafe.” Thankfully my friends have been very supportive.
When I do want a festive drink, I have ½ naturally sweetened cranberry juice and club soda with a lime. (I also think it’s pretty.) If you Google “festive non-alcohol drinks”, I’m sure you can find more. There is no need to avoid hot cider. You can drink 100% unsweetened fruit juices, if you halve them with water. Is Kombucha alright to drink? A friend said she didn’t like the taste of this so I never had a desire to try it. Just check the label. In fact, check the labels on food, drinks, body lotions, make-up, shampoos, cleaning products, etc.
Whenever I am tempted to eat something I shouldn’t I still ask myself, “Do I want to eat this or keep my breast?” which puts things quickly into perspective for me. Foods that I see tempting but can’t eat, I call “cancer foods”. This does a very good job of freeing me of my desire. Each person, I trust, will develop what works best for him or her. I promise you it gets easier over time.
It’s important for everyone diagnosed with cancer to choose a treatment that works best for them because our attitude has much to do with our success. We are all so different, so having various options is actually perfect, though I understand it can be confusing. With many choices, people can find the best treatment for them and I think that this is a very good thing. Personally, I loved having a protocol that helped me get healthier in mind, body, and spirit and encouraged me to develop healthier habits while helping me rid myself of cancer too. It was perfect for me but I do not expect Bill Henderson’s protocol to be the right choice for everyone.

One of the reasons that I’m writing my book “The Art of Living” is because I have had an unusual life. When I was just thirty-three years old, five neurosurgeons told me that I was going to die in six months to a year, from an inoperable brain tumor. Who would have ever thought this would ever be to my advantage when I was told, years later, that I needed a mastectomy — but it most certainly was!
Because five out of five (of the best doctors that I could find) had been wrong in my past, I could not possibly believe that everything doctors say is true. I knew that doctors are just like the rest of us and that that they too make mistakes. I certainly make mistakes, so why can’t they? After all, we are all only human.
Plus the more I understand how our bodies work, the more amazed I am. I always believed that Our Maker would not have made us so magnificently and then just leave us to fend for ourselves. When I was taught as a child that we had immune systems, I smugly thought “I knew it!”
I told my surgeon that I am not someone to make quick decisions and he said that he would not be comfortable if I waited longer than a month to have the mastectomy. I promptly did much research.
Fortunately I have loving and intelligent friends in my life — people to whom I can turn to for help. My dear friend Julianne Eanniello, http://www.inquirewithjulianne.com, helped me to ground and focus myself and to get my thoughts together. Her love is felt in everything this woman does.

A few days later another caring and big-hearted friend BJ Gaynor, http://www.innerpossibilities.com, handed me a copy of Bill Henderson’s protocol from his book titled “Cancer Free” and respectfully said, “You might want to consider this.” In less than two seconds I knew that this was what I was looking for.
Years ago, Dr. Lori Leyden, http://magical-living.com/about_lori.html, from whom I learned stress management (after I got radiation damage from treatment on the brain tumor) had taught me that my body knew answers before I often intellectually did. Lori taught me the many advantages to listening to my body, and that we all can develop and fine-tune our intuition. Since I had learned to develop mine, when BJ handed me the papers, I could feel “YES” shouting loudly from every single cell in my body.
Does this answer your question as to where I got the courage Carol? Not having surgery just made far more sense to me and felt right, so I’d have to say my life’s experience contributed a lot and being blessed with having loving, intelligent, supportive and generous people in my life, as well as having a strong belief in God, is the short answer. All contributed to my belief that I could rid my body of cancer using natural means and avoid having surgery.
I would be remiss if I did not mention that I had learned the importance of empowering myself years before and to stop questioning and working against myself, as many people do. In fact, I think this is so important that it would be a good subject for a future blog.

Remember the Lay’s potato chip commercial — “I bet you can’t eat just one!” Those of us concerned about our health wouldn’t want to eat even one today! We certainly still may crave a salty snack. I know that I certainly do. Kale chips are perfect for this! And they are good for you and kids love them too.
There are many different recipes for these, so you can make them according to your taste. I haven’t yet discovered any way of making them that I did not like. The following recipe is my favorite so far, however I would suggest Googling “Kale Chips” and seeing if any other recipe looks even better to you and try it. They are healthy and easy to make, so try making them a number of ways.
It is important that you use organic kale because kale is part of “The Dirty Dozen” — meaning they have a higher amount of chemicals on them than most vegetables. (You can Google “Dirty Dozen” and print out a list of the these fruits and vegetables, as well as those that you need not buy that are organic—such as avocados. Keep these lists in your wallet, to refer to whenever you are grocery shopping. You’ll eat healthier and save money too.) Because this recipe calls for lemon zest, be sure to only buy organic lemons.
Lemony Kale Chips
A bunch of kale, with stems trimmed off (because they are bitter but can be saved for soups) Break leaves into bite-size pieces. Wash well using cold water and dry with paper towels.
3 tablespoons of olive oil
2 teaspoons of organic apple cider vinegar (Shake bottle before pouring)
2 tablespoons of lemon zest, from about two large lemons.
If cooking in an oven:
Heat oven to 375 degrees.
Place in a large bowl and toss all ingredients together, tossing well like you would any salad.
Spread evenly on two cookie sheets, trying not to let any of the pieces touch one another.
Place in oven but keep a close eye on it, because it can burn very easily. Cook for 5 – 7 minutes, rotating the cookie sheets and turning kale over with a spatula, about half way through. Kale ought to be dark and crisp but not burnt when done.
If you have a dehydrator:
This is my preferred method to cook kale chips because it will not burn, so I need not have to worry about this. Cook for the first hour at 135 degrees and the next 3-4 at 115 degrees.
Regardless of what way you cook your kale chips, they are good but they are best eaten right away while they are crisp, before they can absorb any humidity. Write me back and let me know how you liked this recipe or let me know how you like to make kale chips best.

Have you ever awakened in the morning feeling loved and appreciating your life and all the people in it? Today I had one of those mornings. I literally woke up with a smile on my face.
Last Friday I had an appointment with my physical therapist Ron Agostini, owner of Physical Therapy of Mystic, in Groton, CT. Ron began, as he always does, by using kinesiology to ask my body where it needed his help on that day. Despite originally coming to him with a problem with my arm, he held both sides of my temples and jaw, for roughly 3 to 4 minutes.
My sight got very blurry and I began seeing waves and I felt an intense sadness as tears fell down my cheeks. When he released his hands, Ron reassuringly replied, “I think we just discovered where you’ve been holding your stress.”
Since my jaw has felt “lighter” than it had in years and I do not want to hold onto any addition stress, I’ve been focusing on seeing and accepting whatever comes my way. I’m doing my best to remain calm and connected within, and accepting what is.
Life and people always surprise us because they are so unpredictable. Everything changes and life is always filled with surprises. Having the ability to accept whatever comes our way and to embrace it, transforms us in many positive ways.
I know that it’s not easy to accept and embrace anything when we are in pain and suffering, so what I have found helps is to first start by cultivating acceptance with less difficult things. Start small and often, and soon you’ll be prepared when difficult challenges come your way.
Have you noticed that whenever we fight and resist things, we generate additional problems for ourselves and that our thinking often becomes distorted? We can accept what’s happening, see the positive, and choose a peaceful state of mind or we can fight, be miserable, and struggle.
Being sick and getting easily fatigued for so many years, forced me to think about how I wanted to use the energy I had. By accepting that everyone has their own perspective — and by understanding and accepting that everyone is supposed to and respecting this — has made my own life run so much smoother. By accepting that my way isn’t the only way to see things, has helped my body to grow stronger too.
By accepting and viewing things from a calm perspective and focusing on how to solve problems —and avoiding blaming others or feeling sorry for myself — has not only cultivated much happiness in my life, improved relationships and helped me to achieve my goals, but it has reduced the stress I was putting on my body.
We cannot change others but thankfully we can change ourselves. By doing so, our lives can greatly improve.

In 1986 I was told that I was going to die of a brain tumor within the year by five neurologists. I did research and lived. In 2011 I was told I needed to get a mastectomy within a month or my life could be threatened. Again I did research and chose to use a natural protocol instead.
